Ingredients
600grams Chicken Thigh
Green Olives
3 Cloves Garlic Minced
1 Brown Onion Sliced
Thyme (Dried 2 TSP or Fresh 2 sprigs)
1/2 – 1 Cup Chicken Stock
1 Lemon, sliced
1 Lemon, juiced
1 TSP Cayenne Pepper
1 TBSPN Honey
Olive Oil
Salt & Pepper
Method
- Preheat oven at 200 degrees Celsius.
- Heat Olive oil in a fry pan over medium heat and brown Chicken thighs on both sides. Remove from pan and place in deep oven dish.
- Then to the same pan add garlic and onions and fry till fragrant and onions are translucent then add it on top of the Chicken in the deep oven dish.
- In a bowl add the herbs, lemon slices, Lemon juice, honey, olives, seasoning and chicken stock – Mix well.
- Pour the above mixture all over chicken in ovenproof dish. Arrange Lemon slices to sit atop the Chicken so the juices seep into the chicken and give it flavour.
- Bake in oven for 25-30mins.
- Serve with complimenting dish of choice! Enjoy!
