Baked Olive Chicken 


600grams Chicken Thigh

Green Olives

3 Cloves Garlic Minced

1 Brown Onion Sliced

Thyme (Dried 2 TSP or Fresh 2 sprigs)

1/2 – 1 Cup Chicken Stock

1 Lemon, sliced

1 Lemon, juiced

1 TSP Cayenne Pepper

1 TBSPN Honey

Olive Oil

Salt & Pepper



  1. Preheat oven at 200 degrees Celsius.
  2. Heat Olive oil in a fry pan over medium heat and brown Chicken thighs on both sides. Remove from pan and place in deep oven dish.
  3. Then to the same pan add garlic and onions and fry till fragrant and onions are translucent then add it on top of the Chicken in the deep oven dish.
  4. In a bowl add the herbs, lemon slices, Lemon juice, honey, olives, seasoning and chicken stock – Mix well.
  5. Pour the above mixture all over chicken in ovenproof dish. Arrange Lemon slices to sit atop the Chicken so the juices seep into the chicken and give it flavour.
  6. Bake in oven for 25-30mins.
  7. Serve with complimenting dish of choice! Enjoy!
