The perfect lunchbox treat!
1 Zucchini, grated
250g feta , small cubes
1/2 cup corn kernels
3/4 Cup plain flour
1 free range egg, whisked
2 TSP Cumin powder
2 TSP Paprika powder
Fresh Cracked Black Pepper, to taste
Pink Salt, to taste
1. Mix all the ingredients together.
2. Heat olive oil on a fry pan to medium heat.
3. Scoop 1 Tablespoon onto fry pan and cook till it’s browned and flip and cook the other side till browned. Remove from pan.
4. Serve with Greek Yoghurt or Homemade Tzatziki.
Keep refrigerated airtight container with baking paper in between each fritter up to 2 weeks.
