Banana Crumble Cake

We have a roster at work for Thursday Treatday for everyone to have a chance to bring something to share with the clinic staff for morning tea. This was what I made for my turn at last month’s Thursday Treatday. My own recipe of buttery banana cake with crunchy crumble top. Hope you guys enjoy making this one!! 

Ingredients

2 Cups plain flour

2 TSP bicarbonate soda/baking powder

3/4 Cup Sugar

3 Ripe Banana, mashed

1 banana, sliced

2 Tablespoon Pumpkin pie spice powder

2 eggs whisked

2/3 cup melted butter
Crumble

3 Tablespoons Butter

3 Tablespoons Plain Flour

3 Tablespoons Brown Sugar

Extra: 1 Tablespoon Brown Sugar
Method

1. Preheat oven for 180 degrees fan forced.

2. Mix mashed bananas, melted butter and sugar. 
3. Whisk in eggs, one at a time.

4. Add dry ingredients with wet ingredients alittle at a time while mixing at medium speed.

5. Pour batter in prepared pan.

6. Decorate remaining sliced bananas on top of cake and drizzle the extra brown sugar on the banana.

7. Mix the crumble and drizzle all over the top of cake.

8. Bake for 40-50 mins or depending on your oven – until skewer comes out clean.
