Health Freak Soup

Autumn begun and with it and brought rainy weather….

Rainy weather means more hearty curries, stews, soups, etc. This is a lazy cooking soup.

 

 

Ingredients

Kale, 2 handfuls -chopped

Quinoa, 1/2cup or 1cup for thicker/chunky soup

1 Brown Onion, diced

5 Garlic Cloves, minced

Cannelini Beans, 1 x 400g can

Diced Tomatoes, 1 x 400g can

1.5L Good Quality Vegetable Stock

Himalayan Pink Salt

Freshly Cracked Black Pepper

Optional

1 Birds Eye Chilli, sliced lengthwise (optional)
500g Good Quality Beef Sausages, fried & sliced
