Carrot & Beetroot Salad


2 Large Carrots, grated

2 Large Beetroots, peeled & grated

3 Scallions, sliced


2 Tablespoons Red Wine Vinegar

1 Tablespoon Cumin Powder

1/2 Tablespoon Honey

1 Lemon, juiced

1/4 Cup Extra Virgin Olive Oil



  1. Mix all ingredients for dressing in a bowl and whisk till well mixed.
  2. Mix sliced Scallions, grated Carrots & Beets into a salad bowl.
  3. Add Dressing mixture and stir till well mixed.
  4. Let salad cool in fridge for 20 mins before serving!


Tip: This salad is particularly delish with white fish!
