Ingredients
2 Large Carrots, grated
2 Large Beetroots, peeled & grated
3 Scallions, sliced
Dressing…..
2 Tablespoons Red Wine Vinegar
1 Tablespoon Cumin Powder
1/2 Tablespoon Honey
1 Lemon, juiced
1/4 Cup Extra Virgin Olive Oil
Method
- Mix all ingredients for dressing in a bowl and whisk till well mixed.
- Mix sliced Scallions, grated Carrots & Beets into a salad bowl.
- Add Dressing mixture and stir till well mixed.
- Let salad cool in fridge for 20 mins before serving!
Tip: This salad is particularly delish with white fish!
