Buzzfeed’s Apple Pie (from scratch)

If you’ve been on Instagram or FB, I’m sure you’ve seen those 1min speed cooking videos like the rest of us! 

Buzzfeed’s minute videos always has me salivating and makes  a cooking some of the complex dishes look so easy! One such recipe is their Apple Pie from scratch recipe….A friend of mine, Izzy, had made it and posted a photo of her creation on FB and it looked absolutely delectable!! 

Original Recipe: BuzzFeed Apple Pie

I’ve made it 3x since! I have changed a few things about the recipe including type of sugar used in and drizzled on the pastry and using a mix of Green & Red apples. 

Ingredients

Pie Dough:-

2.5 Cups of Plain Flour

1/2 Teaspoon Salt

170 grams Butter, cubed

4-8 Teaspoons of Iced Cold Water
Filling:-

1.135kg Mix of Green Apples & Red Apples, cored & thinly sliced

3/4 Cup Brown Sugar

1/2 Lemon, juiced

1/2 Teaspoon Salt

2 Tablespoon Flour

1 Teaspoon Cinnamon

1/4 Teaspoon Nutmeg
1egg, whisked

1-2 Tablespoon Granulated  Raw Sugar
Method

1. Preheat the oven to 375°F/200°C.

2. In a medium-sized bowl, add the flour and salt. Mix with fork until combined.

3. Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.

4. Gradually add in ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.

5. Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.

In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and lemon.

6. Mix until combined and all apples are coated. Refrigerate.

7. On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch thick.

8. Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.

9. Pour in apple filling mixture and pat down.

10. Roll the other half of the dough on top.

11. Trim the extra dough from the edges and pinch the edges to create a crimp. 12. Make sure edges are sealed together.

13. Brush the pie with the beaten egg and sprinkle with the sugar.

14. Cut four slits in the top of the pie to create a vent. And if you’ve got some cookie cutter this is where you can get alittle creative!

15. Bake pie for 50-60 minutes or until the crust is golden brown and no grey-ish or undercooked pastry remains.

16. Allow to cool completely before slicing.

17. Top with your favourite ice cream and enjoy!

TIP: 

-If you have extra pie pastry cut out some fun shapes with a cookie cutter and decorate your pie top!

-You may need to use more icy cold water than stipulated in the recipe. Add small amounts at a time not to make the dough too wet.
